Shrimp and Tofu Kare Kare Recipe for Lent

Ingredients:
5 cloves garlic, chopped
1 medium onion, chopped
1 tbsp annato/atsuete powder
1 pork broth cube
2 cups water
1/2 cup peanut butter
1/2 cup crushed peanut
Cooking oil for frying
1 block tofu, sliced
8-10 pcs shrimps
2 eggplants, sliced
1 bunch snake beans, sliced
1 bunch bokchoy
Seasoning granules
Procedure:
1 Pat dry with paper towel 1 block tofu and slice into half inch thick pieces.
2 Season with salt or seasoning granules.
3 Deep fry or air fry until golden brown. Set aside.
4 Use cooking oil from fried tofu, fry sliced eggplant until golden brown. Set aside.
5 Season with salt the 8-10 pcs shrimp.
6 Fry both sides of shrimp until orange in color. Set aside.
7 Chop 5 cloves of garlic and fry. Add chopped medium onion.
8 Add 1 tbsp anatto/atsuette powder. You may add more until desired color is achieved.
9 Add 2 cups water, bring to a boil.
10 Add 1/2 cup peanut butter.
11 Add 1 pc pork broth cube. Simmer for 5 minutes.
12 Crush 1/2 cup peanuts and add. Simmer for another 5 minutes.
13 Add Snake Beans, cut into 2-inch pcs. Simmer for 5 minutes.
14 Add Bokchoy/Pechay. Simmer for 2 minutes.
15 Add fried eggplant, shrimp and tofu.
