This is a Filipino ginger chicken soup usually served with papaya.
Ingredients:
1 k. whole chicken, cut up
2 cups young papaya or sayote
1/2 cup dahon ng sili or spinach
5 cups water
2 tablespoons ginger, cut into strips
1 clove garlic, crushed
1 medium onion, sliced
2 tablespoons oil
2 tablespoons patis (fish sauce)
pinch of salt and pepper
Procedure:
1. In a medium casserole, heat oil under medium fire. For about one minute, sauté onion, ginger and garlic.
2. Add chicken and water. Bring to a boil and simmer for 30 minutes or until chicken is cooked.
3. Season with patis, salt and pepper.
4. Add papaya, cook for five minutes.
5. Add in dahon ng sili or spinach, cover and remove from heat. Let it stand for five minutes. Serve hot.
