Leche flan is a baked milk and egg custard, which is a popular dessert in the Philippines. This is sometimes called the local creme bulee.
Ingredients:
12 egg yolks
1 can condensed milk
1 pint milk
1 tbsp. vanilla
1 cup sugar
1 cup water
Procedure:
1. Prepare oven to 325 F.
2.Melt sugar with 2 tbsps. of water. Caramelize in high heat.
3. Put a thin layer of the caramel on 12" tin container. Make sure all sides are lined.
4. Beat egg yolks until well blended. Add condensed milk while gradually stirring.
5. Add the water, stirring constantly then add in vanilla.
6. Pour mixture in caramel-lined tin container. Cover with aluminum foil.
7. Place tin in a larger baking pan half-filled with water. Bake for about 1-1/2 or until knife inserted in the center comes out clean.
