This recipe is one of the easist to cook. The munggo beans are usually sauteed with dried shrimps or pork.
Ingredients:
1 1/2 cup munggo beans
5 cups water
4 cups broth
1 bunch ampalaya leaves
4 lbs. hibi (dried small shrimps)
1 tomato
1 clove garlic, minced
1 onion, sliced
1 tbsp. salt
Procedure:
1. Place mungo beans and water in a pot and bring to a boil over high heat. Lower heat and cook for 30 to 45 minutes partly covered or until beans are tender.
2. In a pan, sauté the garlic in a tablespoon of oil. Brown the garlic then add the onion and hibi.
3. Add the tomato, beans, broth and salt to sautéed mixture, let it come to a boil.
4. Add ampalaya leaves, cover, then remove from heat at once. Let it stay for five minutes before serving.
